String Bean Salad with Bacon Dressing

  • 1/2 pound sliced bacon, cut fine
  • 1 medium-sized onion, chopped fine
  • 1 cup salad oil
  • Salt, pepper
  • 1 cup cider vinegar
  • 1/2 cup consomme or hot water
  • 4 pounds string beans, cooked and drained
  • 1 tablespoon sugar
Fry the bacon until crisp, place it in salad bowl with the onions and salad oil. Add salt, pepper and sugar, mix together well, then add vinegar and hot consomme or water. Mix in the string beans until they are thoroughly coated with the dressing. Chill in refrigerator at least half an hour before serving.
