Stewed Pig's Feet

  • Pig's feet
  • Thin slices of bacon or ham
  • Blade of mace
  • Bunch of parsley, cut rather fine
  • 1 small onion, sliced
  • Black pepper
  • Broth or stock
Boil the feet until quite tender, but not until the bones come out. Take them out and drain.

Lay thin slices of bacon or ham in the bottom of a stew pan. Lay the pig's feet on them. Season with mace, parsley, sliced onion and black pepper. Cover with broth or stock and cover them closely. Bake in an oven for 45 glorious minutes (be patient, you rascal).

Thicken the gravy and pour atop the meat.
