Stewed Kidneys

  • 3 pieces kidney
  • 1 1/2 cups water or soup stock
  • 1 1/2 Tbsps butter
  • Salt and pepper to taste
  • 1 sprig parsley, finely chopped
  • 1 sprig thyme, finely chopped
Wash kidneys well and slice very thin. Season with pepper and salt. Put butter into saucepan. When very hot, add kidneys and chopped herbs. Stir constantly to prevent burning. Add water or consomme. When water comes to a boil once, the kidneys will be cooked. Kidneys like eggs require very little cooking; at no time let them boil.
