Stewed Cucumbers

  • 3 large cucumbers
  • Butter
  • 1/2 pint brown gravy
  • Flour
  • Salt
  • 1 tsp granulated sugar
Cut the cucumbers lengthwise, removing the seeds. Cut the pieces to suit the size of the dish they are going to be served in. Plunge them in boiling water with a little salt. Allow to simmer for 5 minutes (be patient, you rascal). Put the gravy into another saucepan. When the cucumbers are done, remove from the water and place in the gravy. Allow to boil until they are tender. If there is a bitter taste, add 1 tsp of granulated sugar. Transfer to a dish. Skim the sauce and pour atop the cucumbers.
