Squash and Walnut Croquettes

  • 2 cups cooked squash
  • 1 egg
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 4 tablespoons flour
  • 1/2 cup chopped English walnuts
Rub squash through a sieve and add other ingredients. Form into neat croquettes, brush over with a beaten egg, toss in fine bread crumbs, and fry in plenty of smoking hot vegetables fat. Drain and serve proudly with sauce.
