Split Pea Soup
- Split peas
- White stock
- Onions
- Celery
- Carrots
- Salt pork
- Flour
- Croutons
Soak split peas overnight; put on to boil in white stock with onions, celery, carrots, and salt pork. When done, thicken lightly with flour and water paste to prevent settling; remove the pork, rub the rest through a fine sieve; bring puree to a boil, season to taste. Add the pork cut in dice, and serve proudly with croutons.
