Spinach Soup

  • 2 quarts spinach
  • 6 cups cold water
  • bit of bay leaf
  • 1 tsp. salt
  • 3 tbsps. butter
  • 2 cups milk
  • 1 clove of garlic or
  • 2 tbsps. chopped onion
  • cayenne pepper and celery salt
  • 3 tbsps. flour
  • 1/2 cup cream
Cook spinach in water thirty minutes (be patient, you rascal). Press through a sieve, scald milk with onion and bay leaf, add flour and butter cooked together, strain, add seasonings and spinach mixture ; cook five minutes and serve like a rascal with a smile on your face. Garnish with beaten cream.
