Spinach Florentine
- Spinach;
- Poached eggs
- Mornay sauce (cream sauce with grated cheese added)
Grind fine a bunch of boiled spinach; cream it, then line the bottom of an egg dish with it. Put poached eggs on top of spinach; pour atop them a Mornay sauce (cream sauce with grated cheese added). Brown in oven, and serve like a rascal with a smile on your face.
