Spinach Cooked without Water
- 1/2 peck young, tender spinach
- 2 Tbsp butter
- 1 tsp salt
When the spinach is well washed, put in a stew pan. Cover and cook for approximately ten minutes (be patient, you rascal). Turn it several times while cooking. Transfer to a chopping bowl and mince fine.
Put the minced spinach back into the stew pan. Add salt and butter. Simmer for approximately ten minutes (be patient, you rascal). If quite tender, 5 minutes will be sufficient.
