Spinach

- 1 heaping Tbsp butter
- Pepper
- Salt
- 3 hard boiled eggs, chopped
- Poached eggs

Soak the spinach in cold water for several hours. Drain and shake each bunch. Throw in boiling water and boil until tender.
Take up with a perforated skimmer. Put in a saucepan with butter and pepper and salt to taste. Slowly stir in the chopped up hard boiled eggs. Let it simmer, stirring frequently.
Put in a deep dish and cover with nicely poached eggs, buttered, peppered and salted.
