Spiced Peaches
- 9 lbs ripe peaches
- 4 lbs sugar
- 1 pint vinegar
- Cloves
- Cinnamon
- Mace
Rub the peaches with a coarse towel and halve them. Put the sugar and vinegar in the kettle with cloves, cinnamon and mace. When the syrup is formed, add in the peaches a few at a time. When clear, take them out and put in more. Boil the syrup until quite rich and pour it over the peaches..
