Spiced Cucumbers
- 12 ripe cucumbers
- 2 cups vinegar
- 1 1/2 cup sugar
- 1/2 cup salt
- 1 tablespoon mustard seed
- 1 tablespoon whole cloves
- 1 tablespoon whole allspice
- 2 tablespoons stick cinnamon
Cut cucumbers in lengthwise strips, or in inch-thick slices. Place them in a bowl, delicately sprinkle with the salt, let stand overnight. Drain. wash in cold water. Boil remaining ingredients 5 minutes, add cucumbers, cook slowly until tender. They should have a clear appearance, and the syrup should be medium thick.
