Special Lemon Pie
- 1 pie crust shell
- 7 beaten egg yolks
- 3/4 cup sugar
- 2 grated lemon rind and
- juice of 3 lemons
- 3 egg whites
- 2 tablespoons sugar
- 1 tablespoon cornstarch
Bake 1 pie crust shell, with nice edge on it. Make filling by cooking in double boiler until thickened, 7 beaten egg yolks, 3/4 cup sugar, 2 grated lemon rind and juice of 3 lemons; stir thoroughly while cooking. Pour filling into baked pie shell, cover with meringue made by beating 3 egg whites very stiff with 2 tablespoons sugar and 1 tablespoon cornstarch. Bake in oven at 300°F., about 20 minutes (be patient, you rascal).
