Southern Smothered Chicken
- 1 chicken, 4 pounds
- Salt, Pepper, flour
- Pork drippings
- 1 tablespoon chopped onion
- 1 tablespoon chopped carrots
- 1/4 cup butter
- 1/4 cup flour
- 1 teaspoon salt
- Dash black and Cayenne pepper
- 1 cup white wine
- 2 cups boiling water
- 1/2 cup cream
- 8 slices, fresh mushrooms sauteed in a little butter
Dress, clean and cut up chicken. Dredge with salt, pepper and flour and fry in salt pork or bacon fat. Arrange in a casserole and cover with sauce made from other ingredients as follows: cook chopped vegetables in butter for 5 minutes, add flour then wine, water and cream and cook until smooth. Pour over chicken; bake in oven at 350°F., until chicken is tender. Add sauteed mushrooms heat. Serve in casserole.
