Southern Lemon Pie
- 4 eggs
- 1 cup sugar
- 1 lemon
- milk
- puff paste
- 2 tablespoons sugar
- grated rind of 1 lemon
Beat egg yolks to a cream with the 1 cup of sugar and lemon rind. Peel lemon, removing every particle of white skin, and cut into thin slices. Have a pie plate lined with puff paste, arrange slices of lemon on paste, add enough milk to eggs and sugar to fill plate, and pour all in. Bake until set. Beat whites to a froth, add the 2 tablespoons sugar, and put on top of pie for meringue. Brown.
