Smothered Tomatoes
- 4 tomatoes
- 2 tablespoons melted butter
- finely minced parsley
- Salt and pepper
Cut tomatoes in halves, crosswise. Arrange in a baking pan with skin side down. Pour over them the butter and parsley, season, and cover with another pan. Cook until they are soft- about 1/2 hour.
