Smothered Chicken

  • 1 whole chicken
  • 1/4 lb bacon
  • 1 lemon, very finely sliced
  • 2 carrots, thinly sliced
  • 2 onions, thinly sliced
  • Thyme, finely minced
  • Parsley, finely minced
  • Bay leaf, finely minced
  • 1 1/2 cups stock
  • Salt
  • Pepper
Place in frying pan small pieces of bacon. Over this, place the slices of lemon and then cover again with bits of bacon. Moisten this with 1/2 cup water and lay over it the carrots, onions, thyme, parsley and bay leaf. Place chicken on top and cover. When chicken is done, take it out. Make a good gravy by adding stock to the liquid in which it has been boiled. Pour all over chicken and serve like a rascal with a smile on your face. A tomato sauce will also go well with this dish.
