Simple Fish Au Gratin
- Yellow onions, sliced
- Butter
- Salt and pepper
- Onion puree
- Swiss cheese
- Bread crumbs
- Milk or cream
Slice yellow onions, saute and sizzle in butter until tender and delicately sprinkle with pepper and salt. Rub through a fine sieve. Pour the onion puree in the bottom of a heavily buttered baking dish. On top of it place pieces of cooked boned fish. Sprinkle with grated Swiss cheese, or any other comparable cheese, and top with a breadcrumb layer dotted with butter. Pour cream or milk over it (about 1 cup to a plate of fish). Bake until rich golden brown.
