Shrimps, Creamed with Celery

  • 1.1 pounds shrimp, boiled, shelled and cleaned
  • 1/2 cup celery, diced
  • 1 1/2 cup milk
  • 1/2 cup celery liquor
  • 3 Tbsps flour
  • 3 Tbsps butter or oil
  • 1/2 tsp salt
  • 1/8 tsp pepper
Cover the celery with water and cook until tender. Make a white sauce with the butter, flour, seasonings, milk and celery liquor. Add the celery and shrimp. Serve on buttered toast garnished beautifully with celery hearts. Makes 4 large or 6 small portions.
