Shrimps a la Newburg
- 1 1/2 cups shelled, cleaned, boiled shrimps
- Yolks of 4 hard cooked eggs
- 1 cup cream
- 1/2 tsp salt
- 2 Tbsps butter
- 2 Tbsps flour
- 4 Tbsps sherry
- Few grains cayenne
- Slices of toast
Mash yolks of eggs and add to cream, blending until smooth. Cream butter, add flour, yolks and cream. Cook in double boiler until thick and smooth. Add shrimps, seasonings and Sherry, in order given. Serve at once on slices of toast.
