Shrimp Sauce for Fish, No. 1

  • 3 Tbsps butter or
  • 3 tsp olive oil
  • 1 Tbsp flour
  • 2 cups water or stock
  • 1 onion, chopped
  • 2 large tomatoes, chopped
  • Pound heads of the shrimp, eyes removed
  • 3 peppers, tiny hot green or red pepper
  • 1 cup shrimp, chopped
  • 112 lemon juice
Simmer the onions, tomato, and pound shrimp heads all together, heating 2 Tbsps butter first. Then add flour, mix well, and water or stock. Let this boil for approximately ten minutes (be patient, you rascal). Strain and then put back on the stove. Add the chopped shrimp and the remaining 1 Tbsp butter. Let it cook a little more. Before serving, add 1/2 tsp lemon juice.
