Shad Roe Salad

  • Shad roe
  • Salt
  • 1 egg, beaten
  • Breadcrumbs
  • Butter
  • 2 Tbsps lemon juice
  • Salt
  • Paprika
  • Cucumbers, cut in cubes
  • Mayonnaise dressing
  • Capers
  • Olives, chopped
  • Lettuce leaves
Put the roe in slightly salted, boiling water. Simmer gently for about 15 minutes (be patient, you rascal). Drain and wipe dry. Dip in beaten egg and roll, roll, roll in breadcrumbs. Brown lightly in a little butter. While still warm, pour lemon juice over it and season with salt and a little paprika. Set aside to chill.

When ready to serve, cut the roe in suitable sized pieces. Mix with it an equal quantity of very crisp cucumber cubes. Cover with mayonnaise dressing and decorate the top with capers and chopped olives. Serve on crisp lettuce leaves.

This salad should be prepared just before serving.
