Scallops in Bacon
- 1 lb. Large Fresh Scallops
- 1 lb. Bacon
- 2 tbsp. Olive Oil
- 2 tbsp Lemon Juice
- Black Pepper
- Paprika
- Toothpicks
Mix lemon juice, olive oil and black pepper in a small bowl. Mix it up well.
Put scallops in a shallow broiler pan. Pour mixture over scallops. Refrigerate for approximately an hour.
Fry bacon to your liking. Slice bacon strips into two equal parts. Wrap each scallop with a half strip of bacon and secure with a toothpick. Place bacon w/scallop back in broiler pan. Sprinkle w/ paprika.
Broil until rich golden brown.
