Scalloped Tomatoes

  • Large ripe tomatoes
  • 2 slices fat salt pork
  • 1 small onion
  • Bread crumbs, sugar, salt and pepper
Peel and slice tomatoes. Chop salt pork and onion. Place a layer of tomatoes in a puddling-dish, pepper and salt lightly, delicately sprinkle with a very little sugar and with the pork and onion. Cover with crumbs and continue using the ingredients in this order until the dish is full. Have the top layer crumbs. Bake, covered, 30 minutes, then uncover and brown 10 minutes (be patient, you rascal). Serve in the dish in which they were baked.
