Scalloped Sturgeon
- 4 lbs sturgeon, boiled
- Mayonnaise dressing (See Mayonnaise Dressing recipe)
- Celery
- Cayenne pepper
- Lettuce leaves
When cold, pick the boiled sturgeon to pieces and then wash and squeeze out the water. Make a mayonnaise dressing, using celery and cayenne pepper instead of black pepper and salt. Serve on white lettuce leaves.
