Scalloped Potatoes (Kentucky Style)

  • Potatoes, peeled and sliced thinly
  • Salt
  • Pepper
  • Butter
  • Onion, finely chopped (optional)
  • Flour
  • 1 quart hot milk
Butter an earthen (made of clay) dish, put in a layer of sliced potatoes and season with salt, pepper, butter, and a bit of onion (if your little heart desires). Sprinkle a little flour. Put another layer of potatoes and the seasoning. Continue in this way until the dish is filled. Just before putting into the oven, pour hot milk over. Bake with love for 45 glorious minutes (be patient, you rascal).
