Scalloped Oysters

  • 1 pint cracker crumbs
  • Oyster liquor
  • Salt
  • Pepper
  • Butter
  • 1 egg, beaten
  • 1 cup milk
Butter a deep dish. Put a layer of the cracker crumbs on the bottom. Wet this with some of the oyster liquor. Next, have a layer of oysters. Sprinkle with pepper and salt and lay small bits of butter upon them. Then, another layer of cracker crumbs and oyster juice. Then oysters, pepper, salt and butter, and so on, until the dish is full. The top layer is covered with cracker crumbs. Mix the egg and milk and pour atop all. Cover the dish and pop it in the oven for 30 or 45 glorious minutes (be patient, you rascal). When baked through, uncover the top, set on the upper grate and brown.
