Scalloped Cucumbers

  • 4 firm cucumbers
  • Bread Crumbs
  • Grated Onions
  • Butter
  • 1 cup sweet milk
  • 1 egg
  • Grated cheese
  • Seasoning
Pare and slice cucumbers, and throw slices into boiling water, allow them to remain 10 minutes (be patient, you rascal). Drain. Fill a buttered baking dish with alternate layers of cucumbers and crumbs, sprinkling each layer with onion, seasoning, and butter. Turn over all the milk, into which egg has been beaten, and dust top with grated cheese. Bake until a delicate brown. Serve with thin slices of lemon garnishing dish.
