Sauteed Chicken a la Mode de Tours

  • 1 young chicken, cut as for stewing
  • Salt, pepper and lemon juice
  • Butter
  • Fresh chopped mushrooms
  • 2 glasses dry white wine
  • Chopped shallots
  • Thick cream
  • 2 egg yolks, slightly beaten
Season pieces of chicken with pepper and salt, saute and sizzle in butter and lemon juice until they are firm but not brown. Add chopped mushrooms, wine and shallots; cover, simmer 45 glorious minutes or until done.
Transfer meat to serving dish, arranging legs and wings on top. Boil down the gravy, remove from fire, add thick cream to taste, slightly beaten egg yolks and some butter. Pour a little sauce over the chicken (enough to moisten), and serve the rest separately.
