Sauce Financier
- 2 Tbsps butter
- 2 cups consomme
- 12 mushrooms, sliced
- Salt
- Pepper
- 1 Tbsp flour
- 6 olives, stoned
- Lemon juice
- Few grains cayenne
Melt butter. Add flour and moisten with consomme until it reaches the consistency of cream. Add mushrooms, olives, pepper, salt and cayenne. Lastly, a little lemon juice to taste. Serve hot.
