Sardine Rarebit

  • 2 Tbsps butter
  • 1 Tbsp flour
  • 1/4 tsp salt
  • 2 tsps mustard
  • 1/4 tsp paprika
  • 1/2 cup milk
  • 1/2 cup cream
  • 1 cup cheese, cut in small pieces
  • 6 large sardines
  • Toast
Prepare a white sauce with the butter, salt, flour, milk and cream. Then add the cheese and stir until melted. Add sardines, skinned and boned, mustard and paprika. Heat well and serve on hot buttered toast. Serves six.
