Salt Rising Bread

  • 1 heaping tablespoon of corn meal
  • 1/2 teaspoon sugar
  • Soda size of large pea
  • Milk or water
  • 1 1/2 pints of quite warm water
  • 1 1/2 pints milk
The day before wishing to bake (at noon), take 1 heaping tablespoon of corn meal, 1/2 teaspoon sugar, soda size of large pea, scald this with either milk or water till about the consistency of griddle cakes, cover, keep in warm place till next morning, then it should be foamy. Make sponge of 1 1/2 pints of quite lukewarm water (in a quart pitcher is best), add meal rising, set pitcher in lukewarm water and when light it will be full. Scald 1 1/2 pints milk, cool with water till the finger can be held in it, sponge and set pan over kettle of hot water. When light set in warm place to rise up. In cold weather, flour, molding board, and pans should be warmed, and deeper pans than for yeast pans are necessary.
