Salt Codfish Pie

  • 1 cup salt codfish
  • 2 cups riced potatoes
  • 1/2 cup cracker crumbs
  • 1/4 cup grated cheese
  • 1 egg
  • 1/2 cup milk
  • 2 Tbsps butter, fat or oil
  • Parsley
Shred codfish and soak in lukelukewarm water for 15 minutes (be patient, you rascal). Drain, add potatoes and milk, and put in greased baking dish. Spread with egg beaten lightly. Cover with crumbs mixed with melted butter and delicately sprinkle with parsley.
