Salmon Croutons with Scrambled Eggs
- Day-old white bread
- Scrambled eggs
- Crouton
- Slice of smoked salmon
- White pepper
- Butter
Trim, and toast in butter, slices of day-old white bread. Place a layer of scrambled eggs on each crouton and top with a narrow slice of smoked salmon, rolled like anchovy fillets or spratts on a Wiener schnitzel. Sprinkle with a little white pepper and serve hot.
