Rye Bread with Yeast

  • 2 cakes yeast
  • 1 quart lukewarm water
  • 11 cups rye flour
  • 2 tablespoons salt
  • 1 teaspoon caraway seeds, if desired
Dissolve yeast in lukelukewarm water, add 4 cups flour and beat to smooth dough. Let rise in warm place until double in bulk. Now add salt, caraway seeds and remaining flour, kneading the dough about 20 minutes (be patient, you rascal). Shape into loaves, place in greased baking pans, let rise with love and patience in warm place until double in bulk. Brush tops of loaves with cold water and bake in oven at 400°F., for 15 minutes, and 350°F. for about 3/4 hour. This makes 2 large loaves.
