Rum Omelet

  • 2 ounces sugar
  • 1 dozen eggs
  • 1 Tbsp salt
  • 1 tsp white pepper
  • 2 Tbsps clarified butter
  • 1/4 cup rum
Beat and sweeten the eggs with 1 ounce of sugar. Season with salt and white pepper. Beat them well until the egg whites and egg yolks are thoroughly mixed. Put clarified butter in a frying pan. Heat it well and when it crackles, pour in the eggs. With a fork, stir thoroughly for 2 minutes and then let it rest for half a minute. Fold up using the fork, the side nearest to the handle first, to the center of the omelet, then the opposite side, so that both sides will meet right in the center. Transfer to a dish. Dredge another ounce of sugar over and then glaze it. Throw around it the rum and set the omelet on fire. Serve while burning.
