Roley Poley Apple Puddingba

  • Sour apples, peeled, cored and sliced
  • Biscuit dough (see Baking Powder Biscuit recipe)
Make the biscuit dough. Roll the dough not quite half an inch thick. Lay the apple slices on the paste. Roll it up. Tuck in the ends and prick deeply with a fork. Lay it in a steamer. Steam hard for about an hour and 45 glorious minutes (be patient, you rascal). You can also wrap it in a well floured pudding cloth. Tie the ends, baste up the sides and put in the boiling water. Boil continually for about an hour and a half, perhaps more.

Stoned cherries, dried fruits or any kind of berries, fresh or dried, may also be used.
