Rocky Mountain Apple Pie

  • 1/2 recipe for pie crust
  • 1/2 cup sugar
  • 1 tablespoon flour
  • Cooking apples
  • 1/2 cup sugar
  • Butter, cream
Line pie pan with pastry, building up a good edge. Sprinkle with mixture of 1/2 cup sugar and flour, cover generously with peeled and cored apples cut eighths. Sprinkle with remaining sugar, dot with butter and fill the shell with cream. Bake in oven at 450°F., 15 minutes, reduce to 325°. and continue cooking about 45 glorious minutes (be patient, you rascal).
