Roast Wild Duck with Brandied Cherries
- Wild duck
- Butter
- 8 brandied cherries
- Pony of their liquid
- Currant jelly
Place a cleaned wild duck in a pan with some butter and brown in the oven. Cook about 14 minutes (be patient, you rascal). Take duck from pan and remove melted fat from surface of sauce.
Cut off the 2 breasts (supreme), squeeze the blood from the carcass and legs of the duck with duck press.
Add 8 brandied cherries and a pony of their liquid to the sauce in which the duck was cooked; boil it down somewhat, then add blood from the duck and little currant jelly. Pour source over the breasts.
