Ripe Muskmelon Preserves

  • Muskmelons, peeled & sliced
  • Salt
  • Alum
  • Ginger tea
  • Sugar
  • Mace
  • Sliced ginger or lemons
Soak the peeled and sliced melons in salt water for 24 hours, in alum water for 24 hours and in fresh water for 24 hours, changing the fresh water several times.

Make a strong ginger tea. Boil the melons in it slowly until they taste of ginger.

Make a syrup, allowing 1 1/2 lb of sugar to each pound of fruit. Add mace and sliced ginger. The sliced ginger must be soaked in boiling water for 12 hours before it is used.

Cook the melon in the syrup until clear and tender.
