Ripe Muskmelon Pickles

 
  • Melons
  • Salt
  • Alum
  • 1 gallon vinegar
  • Cinnamon
  • Cloves
  • 3-4 lbs sugar
Take hard melons, sufficiently ripe to be well flavored. Slice them lengthwise. Scrape out the seed and lay the melon in salt overnight. Wash and wipe dry.

Put the melons in alum water for an hour. Wash and wipe them again. Cut in slices and pack in jars.

Pour over a syrup of vinegar seasoned with cinnamon and cloves. Put 3-4 lbs of sugar to 1 gallon of vinegar. Boil until it is sufficiently thick.
