Rich Plum Cake, or Wedding Cake
- 4 pounds flour
- 3 1/2 pound butter
- 3 1/2 pounds sugar
- 36 eggs, leaving out twelve whites
- 2 pounds citron
- 2 pounds orange
- 2 pounds lemon
- 4 pounds almonds mixed with as much sugar
- 4 pounds raisins
- 3 pounds currants
- 3 ounce mixed spice
- 1 pint each brandy, white whine and rose water.
Pound almonds fine, and mix with as much sugar; put in an iron pot and stir constantly over the heat until quite dry. Stone raisins, and mince half of them fine. Mix batter and add fruits and spices; then wine and egg whites last. Bake four hours in a well-buttered and papered pan. Sift plenty of flour on top before putting the cake in the oven.
