Rice Waffles, No.1
- Dry ingredients:
- 1 quart flour
- 1/2 tsp salt
- 1 tsp sugar
- 2 tsps baking powder
- Other:
- 1 large Tbsp butter
- 2 eggs, separated
- 1 1/2 pints milk
- 1 cup boiled rice
Sift the dry ingredients well together. Rub the butter into the flour mixture. Beat the egg yolks well and add to the mixture; then add the rest of the ingredients. Add the stiff whites last of all. Heat the waffle-iron and grease it evenly. Pour the batter into the half of the iron that is over the range until nearly 2/3 full. Cover, allow to cook a moment, then turn and brown slightly on the other side.
