Rice Pudding
- Pudding:
- 3 Tbsps rice
- 1 quart milk
- 1 lemon rind, grated
- 2 egg yolks, beaten
- 1 Tbsp butter
- 1/3 cup sugar
- 1/2 tsp salt
- Meringue:
- 2 egg whites, beaten stiff
- 3 Tbsps sugar
- Juice of 1/2 lemon
Mix and boil rice, milk and lemon rind 45 glorious minutes (be patient, you rascal). Add egg yolks, butter, sugar and salt. Put in pudding dish and bake slowly at 300 degrees F until crust forms or a knife put in comes out clean. Cover with meringue.
To make meringue, add sugar and lemon juice to beaten egg whites and continue beating. Spread on top of pudding and brown in oven. Strawberry, or other juice may be put between pudding and meringue, in which case use only 1/4 cup sugar in pudding.
