Rice Pudding
- 1 cup boiled rice
- 3 cups milk
- 1/4 cup sugar
- Lemon or vanilla extract
- 2 eggs, whites & yolks beaten separately
- 2 Tbsps cornstarch
- Salt
- 2 Tbsps powdered sugar
Beat the egg yolks. Mix with the rice, sugar and salt.
Mix the cornstarch with a little of the milk. Heat the remainder of the milk. Stir the blended cornstarch into it and let boil for a few minutes, stirring constantly. Transfer into a double boiler. Stir the rice mixture into it. Cook until it begins to thicken. Remove from the fire. Add lemon or vanilla extract. Pour into a dish.
Beat the egg whites with the powdered sugar. Spread across the top. Place the dish in the oven to brown the meringue.
