Republican Cake
- 1 lb sugar
- 1 lb flour
- 1/2 lb butter
- 1 cup cream
- 5 eggs, yolks & whites beaten very light separately
- 2 tsp cream of tartar
- 1 tsp baking soda, dissolved in a spoonful of hot water
- Rind of 1 large lemon
- Juice of 1 large lemon
Stir the butter and sugar together to a cream. Add the lemon juice and rind. Stir it in well. Add the egg yolks, then the cream and flour, with the cream of tartar added to it, beating each in well. Add the beaten egg whites. Lastly, add the dissolved baking soda.
Bake in 1 large cake as pound cake.
