Red Cabbage Pickle
- Red cabbage
- Salt
- Vinegar
- Red beets
- 1 tablespoon each whole cloves and peppers
Slice red cabbage very finely into a colander. Sprinkle each layer with salt and let drain 2 days. Put into jars, cover with boiling vinegar, adding a few slices of cooked red beets. If desired, 1 tablespoon each whole cloves and peppers may be tied in a bag and boiled with the vinegar.
