Chocolate-dipped Candied Grapefruit Peel

  • Candied Grapefruit Peel (see Candied Grapefruit Peel recipe)
  • Chocolate coating, melted
Prepare Candied Grapefruit Peel. Dip each grapefruit straw in chocolate coating. Lay on wax paper to dry.

Fruit Cocktail

  • 1/3 cup pineapple, shredded with a fork
  • 1/2 cup orange pulp, sliced
  • 1/2 cup bananas, sliced
  • 1 cup berries or grapefruit
  • 1/3 cup currant jelly, melted
  • 3 Tbsps lemon juice
  • 1/2 cup sugar
Mix the shredded pineapple, sliced orange pulp and bananas and berries together. Pour over the dressing.

To make the dressing, heat the jelly and sugar together. Add lemon juice.

Chill and serve in glasses.

Tangy Grapefruit Jelly

  • 3 cups grapefruit juice, fresh or canned
  • 1 box powdered pectin
  • 4 cups sugar
  • 7 drops yellow food color
Combine the grapefruit juice and powdered fruit pectin in a large kettle. Mix completely. Bring to a hard boil over high heat, stirring constantly.

Slowly stir in the sugar all at once. Bring to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat.

Slowly stir in the food coloring and skim.

Ladle into hot, sterilized glasses and cover with hot paraffin.
