Grapefruit Recipes

Mixed Fruit Salad

  • 1/2 cup pineapple, shredded
  • 1/2 cup nut meat, chopped
  • 1/2 cup orange pulp
  • 1/2 cup grapefruit pulp
  • 1/2 cup maraschino cherries, halved
  • 1 1/2 cups bananas, sliced
  • For the dressing:
  • 2 egg yolks, beaten
  • 1/2 cup sugar
  • 1/2 tsp mustard
  • 2 Tbsps butter
  • 2 Tbsps lemon juice
  • 1 tsp salt
  • 2 Tbsps vinegar
  • 1 Tbsp olive oil
  • 1/4 tsp paprika
  • 3/4 cup whipped cream
Mix all of the above ingredients together. Chill. Serve with dressing.

To make the dressing, cream the butter and sugar together. Add to the beaten egg yolks. Then add the rest of the ingredients except for the whipped cream. Cook in a double boiler until thick, stirring constantly. Set aside to cool off. Add cream. Pour over salad.

Tangy Grapefruit Jelly

  • 3 cups grapefruit juice, fresh or canned
  • 1 box powdered pectin
  • 4 cups sugar
  • 7 drops yellow food color
Combine the grapefruit juice and powdered fruit pectin in a large kettle. Mix completely. Bring to a hard boil over high heat, stirring constantly.

Slowly stir in the sugar all at once. Bring to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat.

Slowly stir in the food coloring and skim.

Ladle into hot, sterilized glasses and cover with hot paraffin.

Dixie Salad

  • 2 cups grapefruit, diced
  • 1 cup celery, chopped
  • 1 cup apples, diced
  • 1/2 cup pecans, chopped
  • 1/4 8-oz. jar mayonnaise
  • Hearts of lettuce
Mix the diced grapefruit, chopped celery and diced apples. Arrange on the hearts of lettuce. Sprinkle the chopped pecans across the top. Garnish with mayonnaise. Serve at once.
