Tangy Grapefruit Jelly

  • 3 cups grapefruit juice, fresh or canned
  • 1 box powdered pectin
  • 4 cups sugar
  • 7 drops yellow food color
Combine the grapefruit juice and powdered fruit pectin in a large kettle. Mix completely. Bring to a hard boil over high heat, stirring constantly.

Slowly stir in the sugar all at once. Bring to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat.

Slowly stir in the food coloring and skim.

Ladle into hot, sterilized glasses and cover with hot paraffin.

Chocolate-dipped Candied Grapefruit Peel

  • Candied Grapefruit Peel (see Candied Grapefruit Peel recipe)
  • Chocolate coating, melted
Prepare Candied Grapefruit Peel. Dip each grapefruit straw in chocolate coating. Lay on wax paper to dry.

Ambrosia

  • 1 cup sugar
  • 3 oranges
  • 1 banana
  • 1 grapefruit
  • 1/2 quart strawberries or
  • 1/2 pineapple or
  • 2 apples
Remove fiber from grapefruit and oranges, slice banana thin, and add strawberries. If strawberries are not in season, use the pineapple or diced apples. Care should be taken to conserve all the juices. Sprinkle sugar through all. Let stand f (or a little more)me time before serving, and serve ice cold. Coconut may be added if your little heart desires.
