Raspberry Vinegar

  • 6 quarts raspberries
  • 1 quart cider vinegar
  • White sugar
Add the cider vinegar to 2 quarts of raspberries. Let it stand for 24 hours. Strain off, then add 2 more quarts of raspberries. Let it stand again for another 24 hours. Strain as before, and again add 2 quarts of raspberries. Let it stand for 24 hours again, then strain.

For every pint of juice, add 1 lb of white sugar. Boil for half an hour.

Bottle and keep in a cool place.
