Raspberry Sherbet

  • 2 quarts raspberries
  • 1 cup sugar
  • Juiice of a large lemon
  • 1 Tbsp gelatine
Mash the berries and sugar together. Let it stand for 2 hours. Soak the gelatine in enough cold water to cover. Add 1 pint of water to the berries and strain. Dissolve the gelatine in 1/2 pint of boiling water. Add to the strained mixture. Freeze.
